It's been a busy few weeks!
But, I'm ahead so far, on Thanksgiving prep!
We are expecting a dozen people in our home on Thanksgiving Day!
Some of my family still have not met my precious, Amelia!
I look forward to spending time with everyone!
On Saturday, we will be having another Thanksgiving get together at Eric & Erin's home with some of her family!
I have so much to be thankful for!
The Lord has blessed me above & beyond what I could ever deserve!
I'm posting a new pic of my little sugar, Amelia!
Isn't she adorable?
OK, yes, Nonna is a little prejudice!
But, that's ok, she's my gal!
And she loves me!

Well, it was a sad election day with unexpected results!
However, it does give us an opportunity to think & pray!
And now, we will see if God's people repent & turn our hearts to Him!
That will determine how God turns the heart of the "king"!
No matter how we feel about the results, we are told by our Father, to pray for our leaders!
We must be compaasionate to our fellow man, love & serve them!
And on a brighter note, I will post updated pics of our precious granddaughter, Amelia!
As of Monday, she weighed 10 lbs. 9.4 oz.
For some reason, my computer is not uploading all of my pics!
But, here is one of Eric, Erin & Amelia at Pettit Creek Farms!
Have a wonderful, productive day & remember that God is in control!
 
Even though, we did not win the presidential election, I am still making Ann Romney's Meatloaf Cakes for dinner, in honor of the Romney family!

Julia Child's Best-Ever Brownies


Julia's favorite browniesJulia's favorite browniesMaster chef and teacher Julia Child, who would have been 100 Wednesday, is famous for complicated French dishes such as her six-page cassoulet recipe, but one of her favorite sweets was a straight-forward, all-American brownie. Developed for the cookbook Baking with Julia, these decadent confections have a deep chocolate flavor and cakey texture that firms up and gets chewy if refrigerated. Bon appétit!
Julia's Best-Ever Brownies (adapted from 'Baking with Julia' with Dorie Greenspan)
Ingredients:
1 1/4 cups sifted all-purpose flour
1 teaspoon salt
8 ounces unsalted butter
4 ounces unsweetened chocolate, coarsely chopped
2 ounces bittersweet chocolate, coarsely chopped
2 cups sugar
1 teaspoon pure vanilla extract
4 large eggs, room temperature
Directions:
1. Put a rack in the center of the oven and pre-heat to 350 degrees.
2. Sift together the flour and salt; set aside.
3. Melt the butter and all of the chocolate together the in the microwave in a large bowl or gently over double boiler.
4. Add one cup of the sugar to the chocolate-butter mixture and stir for 30 seconds. Stir in the vanilla.
5. Mix the remaining sugar and the four eggs in an electric mixer bowl for a few seconds until just combined.
6. Little by little, pour half of the sugar-egg mixture into the chocolate mixture, stirring gently but constantly with a rubber spatula so that the eggs don't set from the heat.
7. Whip the remaining sugar and eggs in the electric mixer until they are thick, pale, and doubled in volume, about three minutes.
8. Using the rubber spatula, gently fold the whipped eggs into the chocolate mixture.
9. When the eggs are almost completely incorporated, gently fold in the dry ingredients.
10. Pour and scrape the batter into an un-buttered 9-inch square baking pan.
11. Bake the brownies for 22-26 minutes, they should rise a little and the top will look dark and dry.
12. Make a small cut in the the center of the brownies after about 22 minutes to check for doneness. They'll be perfect if they are just barely set and still gooey.
13. Remove from oven and cool in the pan on a rack before cutting.

I saw this recipe on facebook & decided to post it on my blog.
That way, I may remember that I want to try it out!

Easy Cheddar Biscuits with Fresh Herbs by Pyntri Cyrcle
2 1/4 cups all-purpose baking
Mix1/2 cup shredded Cheddar
Cheese2 tablespoons fresh rosemary,
Chopped1/4 cup sour cream2 tablespoons Dijon mustard1/3 cup milk1 egg, lightly beaten
...

Preheat
Oven to 425 degrees. In a medium bowl, stir together baking mix, cheese, and Rosemary. In a separate bowl, stir together sour cream, mustard, and milk. Stir Wet mixture into dry mixture until well combined. Drop dough in 2-inch rounds Onto a baking sheet. Brush tops with beaten egg. Bake in preheated oven 12 to 15 minutes. Serve warm.

Things have been busy lately.
 Not that I'm ever, not busy!
I was able to spend a lot of time with Amelia last week.
That is something that makes Nonna happy!
Speaking of our precious little miracle, Erin took some pictures of her Saturday!
She is absolutely adorable!
And she now weighs 6 lbs. 9oz.
God has proved His power in this little girl!
Look how beautiful she is!
 Nonna's gotta brag a little!





Now that I have done my Nonna bragging, I should get back to work!
I'm making Spaghetti with Meatballs for dinner!
And I need to get some more laundry done!
I went to Publix earlier, and with coupons & their great BOGO ad, I saved 60%!
I think I'm finally learning this coupon thing!
It's been a lot of work, but I love the savings!
So, now it's off to work I go!

I was able to spend a few hours babysitting my little Amelia Monday & Tuesday for Erin to go visit her grandmother who is in the hospital.
What a special thing to be able to bond with my precious granddaughter.

Last night was date night. I had a special evening with my sweet Marty eating at our favorite Chinese restaurant, Golden City.

Today, our sweet son, Eric is 34 years old. I am so proud of the man he has become.
I love you, Eric!

Today, I also have my friend, Julie & her precious children, Matt & Rebecca on my heart.
Julie's husband, Gene passed away one week ago today in a construction accident.
My heart hurts for them & I am praying that our Lord comforts them as they grieve this unexpected loss.
Gene, we know you are enjoying being in the presence of our Lord!


Please pray for this precious family as they grieve!

Our granddaughter, Amelia is off all tubes, taking bottles for all of her feedings & scheduled to go home on Tuesday, July 3rd! And she weighs 3 lbs. 14 oz.!
Praise God from Whom all blessings flow!

Poppy & Nonna are going tomorrow to the NICU to take an infant CPR class with
Daddy & Mommy!

Amelia is up to 3 lbs. 11 oz. & is taking 3 bottle feedings a day! Now all she needs to do is go to all bottle feedings & get to 4 lbs. & she will be ready to go home! Our God is so good!

Of course, we also got to visit with our precious daughter-in-love, Erin!
And Poppy got to hold Amelia for the first time today!

Happy Father's Day to you Dads, especially to my sweet son, Eric, who is a first time Dad!! What would we do without Dads? My wonderful hubby who is a great Dad, is having to work today, so we didn't get to go to church. When you own a business, you have to go when there is an issue!

We had a wonderful church service this morning.
Pastor T.P.'s message in Amos was so thought provoking.
I needed  to hear how God's judgement & mercy go hand in hand.
I will be studying that more this week.
It was also a Communion Service.

After church, Marty (Lamar) & I went to see our precious granddaughter, Amelia Faith, in the NICU at Kennestone Hospital.
She is up to 2 lbs. 13 oz.
God is truly working in her little life, giving her strength & love!
How sweet it is to watch His work in progress!

After we left the hospital, we went to lunch & then home for a nap, which I really needed!

And now, to enjoy the rest of this Lord's Day!
